
1c mashed ripe bananas (3 small or 2 large)
1/2c brown sugar
1/3c butter, softened
1 egg
1tsp vanilla
1 1/4c all-purpose flour
1/2c wheat germ
1tsp baking powder
1tsp baking soda
1/4c milk
1/4c sugar (white)
1tsp cinnamon
1) Preheat oven to 350 degrees F.
2) In a mixing bowl add banana, brown sugar and butter. Beat until smooth and light.
3) Beat in egg and vanilla.
4) Add flour, wheat germ, baking powder, baking soda and milk. Mix lightly, just enough to moisten.
5) Spoon into greased muffin tins or use cupcake liners.
6) Mix white sugar and cinnamon together and sprinkle over the top of muffins.
7) Bake for 20 minutes.

Also, someone gave us these Wilton silicone baking cup liners as a wedding gift and I just decided to use them for the first time this week. I must say that they are so wonderful! It's much easier to wash the muffin pan when there aren't crumbs stuck to it.
